Soil&Grapes
The clayey soils, poor in organic matter, rich in mineral salts are great for these crops selected. The vine stems its roots in an arid soil that, due to its particular permeability, can not withstand rainwater, thus enriching the organoleptic arrangement of grapes of particular salt components. The twelve hectares of farm vineyards include the best vines carefully picked and cultivated with guyot and twisted cordon system.

Work on Farmland
The use of specific technical details such as traditional manual pruning, rouging of rows, soil enrichment with organic fertilizers, green pruning, bunching of grapes, spinning, meticulous cracking of branches and defoliation of one side of the vineyard to make a healthy ripening of the bunches, make it possible to have healthy grapes of excellent quality. Phytopharmaceuticals treatments sulfur and copper based in full respect for the environment.

The Cellar
The desire to produce top quality wines prompted us to build a cellar that could be forefront of technology in every way. All the processes of winemaking always take place separately depending on both the grape variety and the vineyard plot from which it derives. All the vinification stages, including the final bottling, are handled directly by us, by our wine cellars and by our winemaker.

The Barrique Cellar
In this special cellar, wines for aging proceed for a period of time that varies depending on the grape and wine that will compose. The period varies from 12 months to a maximum of 24 months. French oak barrels of different roasting are used.

Our new Cellar
The new cellar of more than 2500 square meters is under construction. The Project is by the Arch. Romano Adolini, an important designer, winner of many national and international awards. Set on the slopes of a wooded hill, the construction has a minimal environmental impact, but iconographically linked to the territory, characterized by sinuous valleys winding along the River Tiber.

Pressing: the olives are pressed within 24 hours after harvesting. Collection is strictly hand-made
Organoleptic characteristics: greenish color with intense golden nuances, to nose reveals fruity notes of olive, fresh and aromatic herbs. Full and enveloping taste, medium bitter and spicy, with long aromatic persistence
